Salting
Salting is the controlled operation of applying a specified quantity of salt or curing mixture to meat and establishing the contact needed for subsequent dissolution, distribution and equalisation.
Operational definition
Salting is the application step within salt-curing. It establishes how much salt is presented to the meat, where it is placed and under what contact conditions it begins to dissolve. It does not by itself prove that the salt has penetrated to the centre, that curing agents have reacted, that pathogens have been killed or that the product is shelf stable. Dry salting may mean rubbing a calculated mixture over a whole muscle, packing a piece in excess salt, or distributing salt through chopped meat. Brining is often described broadly as wet salting, but it has its own concentration, water-quality and uptake controls. The distinction matters because application failure and distribution failure occur at different times. A weighed cure left in the bowl is an application failure. A correctly applied cure that has not been allowed to equalise is a distribution failure. Good records and article architecture keep those questions separate.
Preparation and calculation basis
Accurate salting starts with the raw material. Pieces are identified, inspected and trimmed consistently before their curing weight is recorded. Skin, bone, fat cover and glands may be retained or removed according to product identity, but the choice affects diffusion and the denominator used in a formula. Scales must resolve the required quantity and be checked with suitable weights. All ingredients and liquids are measured by mass, in grams, because volume measures change with crystal size, packing and operator technique. The calculation sheet states whether percentages apply to meat only, the total meat block, or meat plus retained liquid. For a Curesmith generic EQ cure, 2.25 per cent salt is the normal starting convention on the stated basis; it is not a universal safety minimum or a replacement for a protected specification. Curing salt is calculated separately from its actual label strength. The operator should independently check the result before application, especially after batch scaling.
Preparing and identifying the mixture
Ordinary salt, curing premix, sugar, spices and permitted accelerators must be identified before blending. Uniform premixing helps distribute ingredients used at small rates, but it does not excuse an incorrect calculation. Concentrated Cure #1 or Cure #2, European nitrited salt, proprietary complete cures and nitrate-containing regional premixes can look similar while having very different compositions and use rates. The label, batch and declared nitrite or nitrate content govern the calculation; a trade name or pink colour does not. The mixture should be prepared for a single identified batch and protected from loss, moisture and cross-use. If some material remains in the mixing vessel or on the bench, the recorded addition is not the amount applied. Where a recipe divides salt across stages, each fraction and its purpose must be stated. Unplanned staged addition can leave an under-salted interior or create a concentrated surface zone that dries poorly.
Equilibrium dry application
In equilibrium salting, the entire calculated mixture is worked over all accessible surfaces and placed with the meat in a closed food-grade bag or container. Creases, bone channels and cut faces need deliberate coverage. Exudate remains part of the system because it dissolves the cure and allows continued contact; a leak can remove both water and dissolved ingredients and therefore changes the calculation. Air removal improves contact but vacuum is not the preservation mechanism and cannot pull salt instantly through muscle. Pieces should be arranged so that no surface is isolated from the dissolved cure, and they may be turned or massaged according to the supported method. The advantage of EQ is a bounded maximum addition and repeatable seasoning. Its limitation is time: limiting the available salt does not accelerate diffusion. Thick, fatty, skin-on or irregular pieces still require a supported cold cure and equalisation period before later drying or cooking.
Excess-salt and salt-box application
Excess-salt methods expose meat to more salt than the intended finished product will retain. Uptake is controlled principally by contact time, temperature, piece characteristics and later brushing, washing, resting or desalting. These methods are central to many traditional hams and other protected products, but they are less self-limiting than EQ. A time rule copied from another product can over-salt a thin piece and under-cure a thick one. Salt beds must remain clean, free flowing and suitable for the defined reuse policy; contaminated or wet salt can spread organisms and alter contact. Surfaces hidden by folds or contact points need attention. Once the salting stage ends, removal of surface salt does not reverse what has already diffused inward, and desalting cannot be estimated from taste alone. An excess-salt process should therefore be followed as a complete, product-specific method rather than reconstructed from a general number of days per kilogram.
Comminuted meat and mixing
Salting chopped or ground meat has a much shorter distribution path, but uniformity depends on mixing. Salt should reach the complete meat block without segregating into pockets of lean, fat, spice or free liquid. As mixing proceeds, salt-soluble proteins are extracted and the mass develops tack. This is desirable for bind, but excessive time or warm temperature can smear fat, damage particle definition and increase microbial opportunity. The order of addition may be product-specific: salt and cure are commonly distributed early enough to extract protein, while starter culture may be added under conditions that protect its viability. Small batches are not automatically uniform; dead zones in a mixer or hurried hand mixing can leave low-cure portions. Verification may include observation of tack and distribution, but appearance cannot measure nitrite or local salt concentration. The batch record defines mixing time, temperature, equipment load and ingredient sequence where these affect the supported process.
Temperature, contact and time
Salting normally occurs under refrigeration because meat remains perishable while salt is still concentrated near the surface. The controlled temperature range must match the recipe, product and governing process; the Curesmith house curing range of 3 to 7 degrees Celsius is a general operating convention, not permission to replace a stricter specification. Product temperature matters more than an occasional room display. Large loads, warm incoming meat, door opening, stacked bags and defrost cycles can create different exposures within one chamber. Contact must also be continuous. Cure lost through leakage, bags lifted above exudate, exposed surfaces in a salt box or a brine level below the meat can stop the intended transfer. Time begins when the supported conditions are established, not when ingredients were first weighed. Monitoring should preserve the actual path so that a deviation can be linked to the affected pieces and hours.
From application to equalisation
Application is not equalisation. Immediately after dry salting, the outside contains more salt than the interior. With time, dissolved ions move inward and local differences narrow. Water and solutes redistribute simultaneously, and product structure makes the process non-uniform. Resting after surface salt removal can be an intentional equalisation stage in traditional ham; closed EQ curing allows distribution to continue within the bounded system. Turning or controlled massage can renew contact, but neither can guarantee centre concentration in an inadequately timed cure. The next processing step should not be started merely because crystals have disappeared. If the later stage is drying, premature transfer can harden the exterior while the centre remains at a different salt and moisture state. If the product will be cooked, uneven cure can produce colour and flavour defects and may undermine a process that credits nitrite or salt. Equalisation therefore has its own time, temperature and evidence requirements.
Monitoring and verification
The salting record should identify each product or lot, raw weight, formula version, denominator, salt and cure lots, calculated and actual additions, operator, start time, storage location and temperature. Reconciliation checks that the mass prepared, applied and remaining makes sense. A second-person or electronic check is useful for safety-critical curing premixes. During cure, bags, containers, salt beds and contact surfaces are inspected without contaminating the product. Thermometers and scales are verified on a defined schedule. Where analytical salt testing supports release or validation, sampling plans must account for centre-to-surface and piece-to-piece variation. Water activity is measured directly if it is the critical finished control. Sensory saltiness, visible exudate, colour and firmness are process observations, not substitute measurements. Trend review can reveal recurring under-addition, scale drift, leaking bags or chamber positions with slow equalisation.
Deviation and product disposition
A salting deviation can involve the wrong salt, wrong curing premix, incorrect denominator, weighing error, lost mixture, incomplete application, warm exposure, broken contact or insufficient time. The immediate response is to identify and hold the affected product, preserve records and prevent an improvised correction from obscuring the event. Adding missing salt may restore the intended total only when the timing, distribution and microbial history remain supportable. It does not automatically correct an earlier low-salt warm period. Removing surface salt cannot undo excess nitrite or nitrate already absorbed. Combining an affected batch with another lot to average the concentration is not a safety correction unless specifically lawful and scientifically supported. Disposition considers the actual formulation, time-temperature exposure, product geometry, later validated steps and applicable authority. A normal final colour, taste, water activity or laboratory sample cannot by itself prove that every piece followed the required salting trajectory.
