Sensory Evaluation and Analysis

The planned use of human assessors and controlled methods to describe, discriminate, rank or measure appearance, aroma, flavour, texture and after-effects of meat products.

Sensory work can ask whether samples differ, which is preferred, how intense an attribute is or what profile describes a product. The question determines assessor type, test design, serving plan and analysis.

Consumers, selected assessors and trained descriptive panels serve different purposes. Training improves vocabulary, scale use and repeatability, but expertise does not remove bias; selection, monitoring and panel performance remain part of the method.

Sample temperature, slice thickness, order, coding, lighting, serving vessel, palate cleansing and waiting time can change results. Randomisation and blinding reduce expectation and carry-over effects.

Clear attribute definitions and physical or flavour references help a panel distinguish related ideas such as firmness, toughness, dryness, rancidity, smoke intensity and fermented aroma. Product identity should not be inferred from a vague overall impression.

Replicates, assessor effects, scale behaviour and statistical uncertainty matter. A small difference that is statistically detectable may still be commercially trivial, while a meaningful defect may be missed by an unsuitable panel or inconsistent sample preparation.

Sensory analysis is valuable for quality, process development and shelf-life observation, but it cannot prove the absence of pathogens, toxins or illegal composition. Suspect product should not be tasted merely to decide whether it is safe.
