Smoke Deposition, Colour and Surface Effects
The transfer and reaction of smoke constituents at the product surface, producing colour, aroma, drying effects and limited antimicrobial or antioxidant contributions.
Smoke components reach the product by gas and particle transfer, then dissolve or react at the moist surface. Chamber circulation and product spacing affect exposure uniformity.
A tacky, prepared surface promotes controlled deposition. Excess condensation creates streaking and harsh deposits, while an overly dry surface can take colour unevenly.
Smoke colour depends on wood, combustion, humidity, temperature, time and surface chemistry. Colour intensity is a sensory outcome rather than a validated safety measurement.
Smoke can dry the surface and contribute flavour, oxidation control and microbial inhibition. These effects are variable and should not be treated as complete preservation.
Poor combustion, resinous fuel, grease fires and excessive residence time can produce soot, bitterness, tar and elevated PAH contamination.
Use suitable fuel and clean combustion, manage humidity and airflow, rotate or map loads where needed, and separate colour targets from lethality and shelf-life validation.
