Smoke Generation and Application

The controlled production, conditioning and delivery of smoke to meat so the required flavour, colour and surface effects develop without uncontrolled combustion or excessive contaminant deposition.

Smoke generation and application covers the creation of smoke, its movement through equipment and its deposition on the product. It belongs beneath smoking, while liquid smoke remains a separate child process.

Wood heated with limited oxygen undergoes drying, thermal decomposition and oxidation. Fuel temperature, oxygen supply, moisture, particle size and equipment design change the mixture of vapours, droplets and particles that reaches the food.

A controlled generator should produce clean smoke without direct flame impingement, soot or heavy tar. Resinous, painted, treated, glued or contaminated wood is unsuitable because flavour and chemical safety depend on the fuel as well as the fire.

Smoke density, chamber temperature, relative humidity, airflow, surface moisture and exposure time govern deposition. A slightly receptive surface can take smoke evenly, while a wet surface may streak and an overly dry surface may colour poorly.

Generators, ducts, dampers and smokehouses accumulate condensate and deposits. Cleaning, drainage, fire protection and separation from food-contact areas prevent old residues, drips and combustion hazards from becoming part of the next batch.

Record the fuel, generator settings, smoke intervals and product conditions. Colour or aroma alone cannot validate safety, and heavier visible smoke should not be treated as evidence of a stronger preservation process.
