Smoke Generators and Fuel Systems
Generators, burners, trays, friction systems, fuel feeders and ducts used to create and deliver food-smoking smoke under controlled combustion conditions.
Smoke can be produced by smouldering trays, external wood-chip generators, friction systems, sawdust units or controlled burners. Each creates different combustion and maintenance conditions.
Wood species, size, moisture and cleanliness affect ignition and smoke character. Painted, treated, glued, mouldy or chemically contaminated fuel is unsuitable for food use.
Oxygen supply, fuel temperature and feed rate determine whether the system produces clean smoke or soot, tar and harsh condensate. Direct flame contact with product or dripping fat is undesirable.
Ducts, cooling, filtration, condensation and dampers can condition smoke before it reaches the chamber. Long dirty ducts and uncontrolled condensate can become contamination and fire hazards.
Ash removal, spark control, safe clearances and emergency shutdown are part of the generator specification. Food-contact or condensate-contact areas need suitable materials and cleaning access.
Record fuel, settings, exposure and abnormal combustion. Colour and visible smoke density do not validate preservation, and recurring soot or bitter deposits require corrective action.
