Smoked Sausages
Sausages exposed to smoke for flavour, colour, surface effects or as part of a combined cooking, fermentation or drying process.
Smoked sausage includes fresh cook-before-eating products, cooked sausages, fermented sausages and dry sausages. Smoke exposure is one process facet rather than one safety category.
Cold smoke develops flavour and colour with limited heating. It must not be mistaken for a cooking step or used to hold raw product in an uncontrolled growth range.
Hot smoking combines smoke with heating, but chamber temperature is not the product endpoint. Core time-temperature and later cooling require measurement.
Some sausages ferment or dry before, during or after smoking. Smoke can influence surface ecology and moisture but does not replace pH or water-activity control.
Fuel identity, combustion, condensate and airflow determine smoke quality and deposition. Heavy visible smoke can increase bitterness, soot and undesirable contaminants.
State raw or ready-to-eat status, record smoke, heat, fermentation, drying and storage separately, and preserve each named regional sausage as an Atlas identity.
