Smokehouse Thermal Processing

The coordinated heating, humidity, smoke, airflow and cooling stages used in a smokehouse to cook or otherwise thermally process meat products.

A smokehouse programme may include drying, smoke application, humidity adjustment, cooking and cooling. Each stage has a distinct purpose and should be documented separately.

Dry-bulb temperature, humidity or steam and air movement affect heat transfer and evaporative cooling. A dry surface can slow heating even when chamber temperature is high.

Diameter, loading, casing, initial temperature and rack position alter the cold spot and process time. Empty-chamber performance does not establish loaded-product lethality.

Smoke can be applied before or during heating, but deposition and colour are sensory outcomes. They do not replace a supported time-temperature process.

Cooked product must enter a controlled stabilization step after heating. Smokehouse cooling, showers or transfer to a chiller must preserve package and hygiene control.

Validate the programme with representative loads, calibrated product probes and mapped equipment. Record stages, deviations, cooling and corrective action.
