Smoking Methods and Process Control
The selection and control of smoking routes, including product preparation, smoke exposure, heating, drying, rest periods and endpoint verification.
Smoking methods include cold, warm and hot routes, intermittent smoking and the use of liquid-smoke systems. The method is defined by the complete product process, not by one chamber temperature.
Salt curing, surface drying and pellicle formation may prepare a product for even smoke uptake. The surface should be controlled rather than left wet, slimy or so dry that colour and smoke deposition become patchy.
Exposure can be continuous or staged with drying and rest periods. Fuel, smoke density, airflow and humidity should be adjusted to the product rather than copied as a universal schedule.
Hot-smoking routes require a supported product time-temperature process. Cold-smoking routes require an independent cure, fermentation, drying, refrigeration or later cook and should not be described as lethal by default.
Colour, aroma and weight change are process observations, not universal safety endpoints. Product temperature, pH, water activity, weight loss or other measurements are used only where they are relevant and supported.
Products intended for storage need an appropriate cooling, drying, maturation or packaging route. Records should connect the smoking stage to the controls that come before and after it.
