Smoking Woods and Fuels

The food-suitable woods and other authorised smoke-generating materials selected for controlled flavour, colour and process performance.

Smoking woods and fuels must be suitable for food use, identifiable and free from chemical treatment or contamination. Hardwood and fruitwood traditions vary, but tradition does not override fuel condition or clean combustion.

Different woods can shift aroma, colour and intensity, yet flavour descriptions are not universal. Product surface, generator design and combustion conditions can matter as much as the species name.

Resinous conifers are generally avoided for conventional meat smoking because they can produce harsh, tarry smoke. Painted, treated, laminated, glued, recycled construction and mouldy woods are excluded.

Fuel moisture and particle size affect ignition, oxygen demand and smoke formation. Excessively wet fuel can promote dirty combustion, while very dry fine material can burn too rapidly unless the generator is designed for it.

Polycyclic aromatic hydrocarbon exposure and poor smoke are controlled through suitable fuel, indirect generation, combustion temperature, oxygen supply, distance, filtration or condensation management and avoidance of fat dripping onto flame.

Store fuel dry, clean and separated from chemicals, pests and floor contamination. Record supplier, species or blend and lot where consistency matters, especially when a product specification requires a named wood.
