Soy

Also known as Soya, Soybean products, TVP, Textured vegetable protein

The family of soybean-derived extenders, from flour and grits to textured protein, the most common non-meat protein in sausages.

Soy is the dominant vegetable protein in meat products, sold in a range of forms: soy flour and grits at the lower end, and textured vegetable protein (TVP), which rehydrates into meat-like pieces. It binds water and fat and boosts protein, and its neutral flavour lets it disappear into a well-seasoned mix. The concentrated and isolated protein forms have their own entry.
