The aromatic seasonings that flavour cured meats, from pepper and garlic to fennel and paprika. Chosen largely for taste and tradition, though many also bring useful antioxidant and mild antimicrobial effects.

Spices are what give each regional charcuterie its signature: fennel in a Tuscan finocchiona, garlic and paprika in Spanish chorizo, white pepper and nutmeg in a French saucisson. They are chosen first for flavour and regional identity, and they are the main way a curesmith stamps character on an otherwise simple mixture of meat, fat and salt.

Beyond taste, many spices carry a quiet functional bonus. A good number are antioxidant, helping slow rancidity, and some are mildly antimicrobial. They are added in small amounts, typically well under one per cent of the meat, with the notable exception of paprika in the Spanish tradition.
