Split Casing

Also known as burst casing, casing blowout

A casing that splits or bursts during stuffing or drying, exposing the meat. Caused by over-stuffing, weak or dry casing, or too rapid drying and shrinkage.

A split casing is one that tears open, either at the moment of stuffing or later during drying, leaving the meat exposed through the tear. It presents as an obvious break in the casing with mixture bulging or showing through, and where it happens during drying, as a piece whose exposed meat dries hard and unevenly around the split while the rest dries normally. Exposed meat is also open to contamination and to surface drying faults at the tear, so a split is both a cosmetic and a practical problem.

The mechanism is a casing put under more stress than it can take, and there are two moments when that happens. At stuffing, over-filling stretches the casing past its limit, or a casing that is weak, brittle or badly prepared tears under normal pressure. During drying, the opposite dynamic can split a casing: as the meat loses water it shrinks, and the casing has to shrink with it. If the meat dries and shrinks faster than the casing can follow, or if drying is so rapid that the surface tightens abruptly, the casing is put under tension it cannot accommodate and splits. So a split is either too much pressure from within at stuffing, or too much shrinkage stress during a fast dry.

The usual causes are over-stuffing, a natural casing that was not soaked and rehydrated enough so it stayed stiff and inelastic, a collagen casing dried out or damaged by poor storage, a casing left to dry out on the horn during a slow stuffing session, a weak or flawed length of casing, or drying so fast that the meat shrinks away from the casing. Under-soaked natural casings and badly stored collagen casings are common and avoidable culprits, since both lose the elasticity a casing needs to stretch and then shrink with the meat. A subtler version is a casing that was supple when loaded but dried slightly while stuffing was under way: as it dries it stiffens and weakens, so a spot that was fine at filling can give way later, splitting once the sausage is hung.

**How to avoid it.** Match the stuffing pressure to the casing and prepare the casing well. Stuff firm and full but not drum-tight, leaving the casing a little give rather than filling it to bursting, and use the right horn size so the casing is not overstretched. Prepare natural casings by soaking and rinsing them so they are fully hydrated, supple and elastic before stuffing, and store and handle collagen casings so they do not dry out or crack. Keep the casings moist throughout stuffing, not just at the start: a casing left on the horn during a slow session dries and stiffens, which weakens it and invites a later split, so a spray bottle of water at the stuffing station, or working in smaller loads, keeps the casing supple until it is filled. Then dry steadily in a good microclimate, so the meat and casing shrink together and the casing is never put under sudden shrinkage stress; the same even, unhurried drying that prevents case-hardening also prevents drying splits.

**How to fix it.** A casing that splits during stuffing can often simply be dealt with there and then: stop, and either re-stuff that length into fresh casing or, for a small tear, tie off on either side of the split and continue, sacrificing a short section. A casing that splits during drying cannot be repaired, since the meat has already shrunk and the tear will not close, so the piece is finished with the split as it is; the exposed area should be watched, since it dries unevenly and is open to contamination, and if the exposed meat spoils or moulds badly the piece is judged on its condition. The durable fix is prevention: sound, well-prepared casings, matched stuffing pressure and steady drying.
