Spreadable and Soft Sausages
Sausage families intentionally formulated to remain soft, creamy or spreadable through fat selection, comminution, cooking, fermentation, moisture and storage control.
The group includes liver sausages, cooked spreads, soft fermented sausages and regional products with very different raw materials and processes. Texture alone does not define one method.
Fat proportion, particle size, protein extraction, liver or blood, moisture, emulsification and cooking determine spreadability. Cooling changes fat structure and the final eating texture.
Some uncooked spreadable sausages use controlled fermentation and cure while retaining high moisture. They need product-specific culture, pH, temperature and refrigerated-life controls.
Cooked spreads require a supported lethality process, controlled filling and rapid cooling. Post-cook handling and packaging can reintroduce contamination after heat treatment.
Casings, jars, vacuum packs and tubs create different oxygen and handling conditions. Shelf life must be established for the actual formulation, package and cold chain.
