Starter-Culture Storage and Viability
The preservation, storage, transport, opening, rehydration and handling controls required to maintain the viable and functional population of a defined meat starter culture.
Starter cultures are living preparations whose population and physiological condition determine lag time, acidification and other technological functions.
Frozen, freeze-dried and other culture forms can require different temperatures and shelf lives. The manufacturer’s current label controls, not a generic freezer rule.
Warm transport, repeated thawing, humidity and prolonged open-package exposure can reduce viability. A cold-looking parcel does not document its full history.
Prevent moisture and contamination, use clean dry tools and return the package promptly to its specified condition. Dividing small doses requires a validated method rather than casual volume measurement.
Some products are added directly and others may allow controlled dispersion. Water quality, temperature, delay and mixing should follow supplier instructions.
Record product, lot, expiry, storage, opening and dose, then verify actual pH or process performance. A failed ferment requires investigation of culture viability as one possible cause.
