Storage of Cut and Opened Cured Meat
The product-specific control of sliced, cut, peeled or opened cured meat after its original protective surface or package has been breached.
Cutting increases exposed surface and may remove rind, casing or package barriers. The product can dry, oxidise, absorb odours or support surface growth differently after opening.
Hands, knives, slicers, boards, wrapping and display equipment can recontaminate ready-to-eat meat. Raw-to-ready separation remains necessary.
Tight wrapping, suitable containers or re-vacuum packaging can limit quality loss, but they do not restore the original validated package state or shelf life.
Refrigeration requirements depend on product stability and local rules. Time since opening, repeated handling and display exposure should be tracked.
Unusual slime, gas, package swelling, mould, colour or odour requires product-specific assessment. Trimming visible growth is not a universal corrective action.
Mark opening or slicing date, protect from cross-contamination, use clean equipment and define a supported opened-life rule for the product and package.
