Stuffing Pressure, Temperature and Fill

Control of pressure, product temperature, air removal and casing fill during transfer of a meat mixture into its final casing or container.

Stuffing should place the mixture uniformly without damaging its structure, warming it unnecessarily or leaving uncontrolled air pockets. The desired firmness depends on the casing and product style.

Pressure must overcome resistance in the horn and casing but excessive force can smear fat, rupture casings or distort particles. Horn diameter, product viscosity and equipment type affect the required setting.

Cold product generally preserves fat definition and limits growth, but material that is too stiff may fill unevenly or overload equipment. Temperature should remain inside the supported operating range.

Entrapped air can create oxidation, weak bind, internal voids and irregular drying. Vacuum filling, careful hand technique and appropriate linking can reduce but not guarantee elimination of air.

Fill should match casing strength, elasticity, diameter and later shrinkage. Overfill promotes splitting; underfill creates folds, poor contact and an irregular finished shape.

Check weight, diameter, firmness, closure, visible voids, product temperature and casing integrity. A stable setting is demonstrated by the filled product, not only by the machine pressure display.
