Surface-Culture Inoculation

The deliberate application of selected food-grade mould, yeast or bacterial cultures to the casing or product surface to guide rind development, colour, aroma and ecological competition.

Surface cultures are applied to promote a known rind ecology rather than leaving surface development entirely to the room. Their role may include colour, aroma, deacidification and competition with unwanted flora.

Rehydration, dilution, water quality, temperature and holding time should follow the manufacturer or validated procedure. A prepared suspension can lose viability or become contaminated when handled casually.

Dipping, spraying, brushing or adding culture to the casing can all work when coverage is controlled. The method should reach the intended surface without pooling or excessive wetting.

Humidity, temperature, airflow, casing permeability and surface moisture determine whether the inoculum establishes. A suitable culture can fail when the chamber favours drying, condensation or competitor growth.

Record culture identity, lot, preparation and application. Observe coverage, colour, odour and unexpected growth, and distinguish normal establishment from contamination or excessive rind development.
