Surface Mould and Rind Faults
The fault family covering uncontrolled, weak, patchy, discoloured or slimy surface growth and abnormal rind condition during curing and maturation.
Surface moulds, yeasts and bacteria respond to casing, inoculation, humidity, airflow, salt, pH and room ecology. The desired rind is product-specific rather than universally white.
High humidity, condensation, poor hygiene and wild inoculum can permit dense, coloured or off-odour growth that competes with the intended culture.
Dry surfaces, uneven inoculation, local airflow, residues and unsuitable chamber conditions can prevent the desired culture establishing uniformly.
Condensation, bacteria, yeast, protein or fat can create sticky or slimy surfaces. Appearance and feel require interpretation with odour, timing and process records.
Record location, onset, colour, texture, odour and recurrence. Visual identification cannot rule out mycotoxin-forming species, and toxin is not removed by ordinary later processing.
Use deliberate food-grade cultures where appropriate, manage chamber and hygiene, and trend environmental findings. Cleaning the surface does not automatically establish product acceptability.
