Not a single defect but the ongoing task of keeping the right mould on the surface and the wrong mould off. Neglect shows as wild colonisation or an uneven, patchy coat.
Surface-mould management is less a single fault than the running discipline of the Mould Control Pillar: the continuous work of encouraging the clean white noble bloom while excluding wild moulds across the weeks or months a cure hangs. It is included among the faults because its neglect is where mould faults come from, and the failure state is visible: a patchy, uneven or bare coat where the noble mould has not taken evenly, wild colours appearing where wild moulds have been let in, or a surface that swings between too much and too little growth. A well-managed surface reads as an even, light white bloom; a neglected one reads as a patchwork.
The mechanism it manages is competitive exclusion on the rind. A surface will grow something over a long cure, and the question is only what. A noble strain established first and kept in good conditions holds the surface and leaves little room for wild moulds to settle, in the same way a starter culture inside the sausage wins the interior. Management is the act of keeping that balance: giving the noble mould the moisture and air it wants, and removing wild growth before it establishes. Where the balance lapses, the surface drifts toward whatever the conditions and the local spores favour.
**How it endangers cured meat.** The reason surface-mould management is a safety discipline and not just a cosmetic one is the same reason Mould Control is a Pillar: some wild moulds make mycotoxins. On cured meat the key hazard is Penicillium nordicum, which produces ochratoxin A, a stable nephrotoxic mycotoxin not removed by later processing, and which is hard to distinguish by eye from the noble white Penicillium nalgiovense. Managing the surface deliberately, establishing a known safe strain and steering the conditions, is what keeps the toxigenic moulds from getting a foothold. Leaving the surface to chance is what lets them in. The discipline is a food-safety control, run continuously, not a finishing touch.
The usual failures are no noble inoculation, so the surface is open to whatever settles; humidity and airflow left unmanaged, so the noble coat grows unevenly or wild moulds find the damp; and simple inattention, not checking the surface regularly, especially early in the cure when the meat is wettest and most vulnerable.
**How to avoid it.** Manage the surface as an ongoing task from the start. Inoculate with a noble strain, chiefly Penicillium nalgiovense, at the beginning so it establishes first. Hold a steady humidity that favours an even noble bloom without letting the surface grow sodden, and give the chamber good, gentle air circulation. Check the surface regularly, most closely in the early days, and wipe or brush away any wild growth before it establishes. Keep the chamber and equipment clean so wild spores are not carried from batch to batch. A seeded, well-run chamber grows the noble mould quickly and reliably and leaves little room for anything else.
**How to fix it.** Where management has lapsed, act on what is there. An uneven or bare noble coat can often be recovered by correcting the humidity and air circulation, and by re-inoculating the noble strain, so the bloom fills in. Wild growth is handled by degree: a small early patch of green or blue can be wiped off with a mild vinegar and water solution, around one part vinegar to nine parts water, wiping the wild growth in a targeted way so the beneficial white bloom is left in place, and the conditions corrected; a more established patch cut back below and around before wiping, and black, red, slimy or heavily fuzzy growth, or anything with an off smell, taken as a signal to discard the piece. Because the toxigenic mould resembles the noble one, colour alone is not proof of safety, so the durable fix is to return to disciplined management: a deliberate noble inoculation, steady conditions, and regular attention.
