Technological Meat Quality

The functional properties of meat and fat that determine curing, binding, colour, yield, texture, drying and stability during manufacture.

Technological quality asks how raw material behaves in a process, not only whether it is wholesome or palatable. Important properties include pH, protein functionality, water holding, colour and fat firmness.

Postmortem pH influences protein charge, water retention, colour and microbial environment. Abnormal pH decline can produce PSE or DFD characteristics with different processing consequences.

Meat that loses water readily can create purge, low yield and crumbly texture, while high water retention can slow drying. Salt and mechanical action modify these properties during processing.

Myoglobin state, oxygen, cure chemistry and heat determine raw and cooked colour. Colour is a quality signal but should not be used as a safety endpoint.

Hardness, melting behaviour and unsaturation affect particle definition, smear and oxidation. Soft or warm fat can destabilise coarse and emulsified products.

Processors can manage variation by specification, segregation, blending and process adjustment. The adjustment must remain within the validated formulation and identity rules.
