If the Safety Triangle is the roof, the Five Pillars are what hold it up: the everyday disciplines a curesmith keeps, without which the forces above cannot do their work.
Meat Quality, because what goes in decides what comes out, and no cure improves poor meat. Hygiene Control, because contamination begins with a lapse in cleanliness, and a cure inhibits microbes rather than removing ones already there. Microbial Control, the active management of the organisms you want, the ferments and the noble moulds, and the ones you do not. Ratio Consistency, because the mathematics of salt, cure and sugar are not approximate, and weighing to the meat is what makes a result repeatable. And Mould Control, because what grows on the outside of a long cure is a decision to be steered, not an accident to be tolerated.
The Pillars are where good habits live. The Safety Triangle tells you what must be true of the finished cure; the Pillars are how you get there reliably, batch after batch.
