Trichinella
Also known as Trichinella spiralis, trichinosis, trichinae
A genus of parasitic roundworms transmitted when viable larvae in raw or inadequately treated muscle from pigs, wild boar, bear and other susceptible animals are eaten.
Identity and infection route
Trichinella are nematodes, or roundworms, whose infective larvae occur in the skeletal muscle of susceptible animals. A person acquires trichinellosis by eating viable larvae in raw or inadequately treated meat. Digestion releases the larvae, adults develop in the intestine, and new larvae migrate through the body to muscle. The food does not become dangerous because Trichinella multiplies during curing; the hazard is infected tissue entering the product with larvae still viable. This makes the control problem fundamentally different from bacterial fermentation. Water activity, pH and starter-culture performance can be important to the product, but they do not prove inactivation of the larvae. Illness can include gastrointestinal signs followed by fever, muscle pain, facial swelling and, in serious cases, cardiac, neurological or respiratory complications.
Species, genotypes and cold tolerance
The genus contains multiple species and genotypes with different host and environmental adaptations. Trichinella spiralis is strongly associated with domestic and wild pigs, but other taxa circulate in wildlife. Some, including T. nativa and certain genotypes or regional populations, tolerate freezing. A process that inactivates T. spiralis in domestic pork therefore cannot automatically be applied to bear, walrus, wild boar or another game species. Codex expressly warns against using freezing as a control where cold-tolerant Trichinella are endemic. Geography, host species and production system belong in the hazard analysis. Even within one species, a time-temperature schedule has defined thickness and temperature conditions. The statement that freezing kills Trichinella is unsafe unless it identifies the parasite, meat, dimensions, actual product temperature, duration and governing authority.
Domestic, outdoor and wild transmission cycles
Trichinella persists when susceptible animals eat infected flesh. In domestic production, controls include preventing access to carcasses, uncooked waste and rodents, protecting feed, controlling animal movement and maintaining recognized husbandry and surveillance systems. Modern controlled production has reduced risk in some regions, but prevalence is not uniformly low worldwide. Outdoor pigs, feral pigs and wild boar may contact wildlife cycles. Carnivorous and omnivorous game, including bear, can carry infection without an appearance that warns the hunter or processor. A farm or country status is evidence only within the official conditions that support it. Meat from an unverified animal cannot be made eligible for a raw ready-to-eat product by visual examination, refrigeration or a general supplier reputation.
Testing and official control
Official programmes commonly use artificial digestion of specified muscle samples to detect Trichinella larvae. The sample site, mass, pooling, laboratory competence and method matter because larvae are not uniformly distributed. The current EU framework sets detailed official-control requirements for domestic swine, wild boar, horses and other susceptible species, with defined derogations and recognized conditions. A negative test supports release only within that system; it does not validate an altered sample plan or prove that an unrelated batch is free. Antibody tests measure exposure and have different timing and performance from direct larval detection. If Trichinella is detected, carcass and associated-lot controls are governed by competent-authority rules. A processor should retain the evidence linking the tested or otherwise eligible carcass to the meat received and used.
Validated heat and freezing
Adequate heat is a direct control when the coldest point of the actual product receives a supported time-temperature treatment. Product thickness, fat, stuffing density, equipment variation and probe placement affect that conclusion; air, smokehouse or oven temperature is not the same as the least-heated meat. Freezing can be a recognized option for susceptible Trichinella in defined domestic-pork products, but schedules depend on meat thickness and actual temperature and do not cover cold-tolerant species. Large pieces and poorly circulating loads take time to equilibrate. Domestic freezers also cycle and may not achieve the assumed product temperature. Wild-game advice should therefore favour validated cooking rather than a casual freezer rule. Heat or freezing credited to Trichinella must also be assessed separately for bacteria and other parasites.
Curing, drying and fermentation
Specific combinations of salt, curing agents, time, temperature, product size and drying have been recognized or validated for particular pork products. That does not make dry curing, fermentation or smoking a generic Trichinella kill step. Diffusion and water loss are slow and uneven in large muscles, while sausage diameter and formulation influence exposure. Cold smoking may add flavour without significant lethality. FSIS guidance and inspection instructions require scientific support and implementation for ready-to-eat pork processes, especially when lethality is achieved through fermentation, salt-curing and drying. The processor must follow the exact supported method and demonstrate the lot did so. A target weight loss, firm texture, final pH, visible mould or months of ageing cannot replace the required formulation and time-temperature evidence.
Jerky, sausage and cross-contamination
Homemade jerky and sausage made from pork or wild game remain recurring sources because drying can be mistaken for cooking. Raw tasting creates exposure before any later treatment. Grinding can distribute larvae-bearing tissue through a larger batch and contaminate equipment, containers and other foods. Cleaning the grinder is therefore both a sanitation and lot-separation control, not a way to make the original meat safe. Mixed pork and game products inherit the hazard of every component. If an infected carcass enters comminution, the scope may include all product sharing the meat block or equipment before effective cleaning. Ready-to-eat designation should be withheld unless every susceptible component has an eligible source or receives a treatment supported for the relevant Trichinella and product.
Monitoring, deviation and disposition
Monitoring preserves source and test eligibility and records every parameter of the credited treatment. A heat process records representative product time and temperature. A freezing process records eligible species and product, dimensions, actual product temperature and duration. A curing process records the exact formulation, size, time, temperature and drying conditions required by its scientific support. If identity, test linkage, treatment or records are missing, affected product is held. A later negative sample, finished dryness or normal appearance cannot prove that all earlier larvae were killed. Competent evaluation may allow a lawful validated reprocess, but it must control the actual parasite without creating another safety or quality failure. If product has entered commerce, traceability, authority notification and recall assessment may be required.
