Vacuum Filling
Vacuum fillers draw product into a feed system while reducing entrained air, then deliver it under controlled pressure through a horn or forming attachment. They can also support portioning and linking.
Lower air content improves cut-face continuity and reduces visible pockets. It does not guarantee that every microscopic void disappears, especially when the hopper is poorly loaded or the mass is highly viscous.
Continuous delivery can improve weight accuracy and reduce manual handling. Pump type, vane clearance, auger action and feed geometry must suit coarse particles, fine batters and delicate inclusions.
Excess vacuum can draw moisture, encourage foaming or damage a fragile structure, while too little vacuum leaves air. The setting is a product parameter, not a universal maximum.
The pump, hopper, seals and transfer paths are extensive food-contact surfaces. Product must remain cold, and the machine must be dismantled or cleaned according to its validated design.
Check portion weight, air pockets, particle damage, temperature and residual product. Vacuum performance should be assessed by the product result rather than the gauge reading alone.
