Vacuum Packaging
Also known as vacuum pack, vacuum sealing
Packaging that removes much of the air from around a food before the package is sealed, reducing oxygen exposure and package volume.
Vacuum packaging removes air and seals the food in a low-oxygen environment. It can reduce oxidation, drying and package bulk, but it does not remove microorganisms or make an unsafe product safe.
Reduced-oxygen-packaging safety becomes central because spoilage signs may be delayed while anaerobic organisms remain possible. Product formulation, refrigeration, intended use and legal controls must be considered together.
Food should be at the appropriate controlled temperature before sealing. The seal area must be clean and dry, and sharp bones, clips or rough surfaces must not puncture the film.
Packaging integrity and sealing depend on film structure, machine settings, vacuum level, seal temperature, dwell time and contamination in the seal. A package that looks tight can still contain a channel leak.
Vacuum can improve quality life but does not create a universal date. Shelf-life evidence must match the food, process, package barrier, storage temperature and whether the product is whole, sliced or opened.
Check for loss of vacuum, purge, swelling, damaged seams and temperature abuse. Re-sealing a leaking or swollen package does not correct the unknown exposure or the cause of package failure.
