Vinegar
Also known as acetic acid, wine vinegar, cider vinegar, Essig, vinaigre, aceto, vinagre, ocet
Acid added directly rather than made by fermentation. It lowers pH immediately, which is useful in a fresh or cooked product and misleading in a dry-cured one, because a low pH from vinegar is not the same hurdle as a low pH earned by a culture.
Vinegar is dilute acetic acid, produced by acetic acid bacteria oxidising the alcohol in wine, cider, beer or a grain wash. In cured meats it appears where a maker wants acidity now rather than acidity earned over days: in the Spanish and Latin American adobos, in the Filipino longaniza and the wider Southeast Asian preparations, in British and American fresh sausages, in the brines and pickles of northern Europe, and in the biltong tradition of southern Africa, where the vinegar wash is both a flavour and a surface treatment.
What it does chemically is straightforward: it lowers pH. That has three consequences worth separating. It tastes sharp and cuts fat, which is why it is used at all. It denatures surface proteins, which firms and slightly opaques the meat it touches, most visibly in a vinegar-washed biltong. And it inhibits many bacteria, including some pathogens, because most of them do not tolerate low pH well.
That third point is where care is needed. A pH lowered by adding acid and a pH lowered by fermentation are not equivalent hurdles, even at the same reading. A fermented sausage builds its acidity through the mass over time, with the culture also competing for nutrients and occupying the substrate, and it does so alongside the salt and nitrite as part of a hurdle system that has been validated as a whole. Splashing vinegar into a mix drops the number without any of that. It may suppress some organisms, it does nothing about Clostridium botulinum spores, and it certainly does not make a product shelf stable. Acidification as a deliberate safety step is a real technique, but it is a validated process with measured targets, not a splash of vinegar.
In dry-cured work vinegar also brings water into a product that has to lose it, and enough acid to matter will interfere with the protein structure the drying depends on. This is why the great dry sausage traditions ferment rather than acidify.
Strength varies more than people assume. Table vinegars run from about 4 to 8 per cent acetic acid, and cleaning vinegar considerably higher, so a recipe volume from one source is not a reliable dose from another. Where acidity is doing real work, the strength belongs in the recipe alongside the volume.
