White Spots, Speckles and Colour Mottling

Local pale spots, crystals, fat particles, pigment loss or uneven colour that require diagnosis because similar appearances can arise from harmless ingredients, process defects or spoilage.

White specks may be fat, salt, amino-acid crystals, connective tissue, surface mould or local colour failure. Their location and structure matter.

Poor mixing, coarse salt, uneven cure, ingredient agglomerates and fat smear can create repeated light points or mottled cured colour.

Air pockets, casing separation, uneven smoke, local drying and package leakage alter pigment chemistry and produce pale or dark patches.

Crystals tend to be firm and structured; microbial colonies may spread, soften or carry odour. Neither can be classified reliably from a photograph alone.

Inspect surface and cut face, note whether spots dissolve or smear, review microscopy or laboratory evidence where needed, and compare process distribution.

Improve ingredient dispersion, cure mixing, air removal, smoke and package integrity. Hold unexplained progressive or odorous spots until competent assessment.
