Whole-Muscle Cured Meats

The family of intact or substantially intact muscles preserved or transformed by salting, curing, fermentation, smoking, cooking, drying, ripening or combinations of these processes.

Whole-muscle cured meats range from refrigerated corned meats and cooked hams to dry-cured legs, loins, necks, bellies and climate-dependent regional products.

Muscle, fat cover, bone, thickness and exposed surfaces determine salt penetration, heat transfer, moisture movement and defect risk.

Dry salting, equilibrium curing, brining, injection and combination curing create different distribution and verification needs. Traditional protected processes may prohibit or require particular ingredients.

Some products receive validated cooking and remain refrigerated; others mature without a lethality cook and depend on supported salt, time, environmental and endpoint controls.
