Whole-Muscle Surface Coatings and Coverings

Fat pastes, pepper, spices, flour, mould cultures, cloth, membranes and other treatments applied to whole-muscle surfaces for protection, flavour, identity or moisture management.

Coatings can protect exposed lean, reduce cracking, carry flavour, support desirable mould or define a traditional appearance. Their purpose should be explicit.

Rendered or fresh fat mixtures can slow evaporation and protect lean surfaces. Fat quality, cleanliness and timing affect oxidation and moisture balance.

Pepper, paprika, herbs or flour may be traditional or decorative. They can introduce allergens, spores, foreign material or uneven moisture if not controlled.

A defined food-grade culture may support surface ripening, while uncontrolled wild growth requires identification and corrective action. Coating is not a substitute for chamber control.

Cloth, membrane and casing alter air and moisture transfer. Materials must be suitable for the contact time, temperature and any later cooking or washing.

Record formulation, supplier, allergen status, application weight, timing and removal or retention. Inspect the underlying surface and maintain the protected-product context.
