Wild Surface Flora
The mixed mould, yeast and bacterial community that arrives from raw materials, casings, rooms, tools and air rather than from a deliberately standardised surface culture.
Wild surface flora comes from casings, ingredients, chambers, racks, tools and previous batches. A stable traditional room may develop recurring communities, but that history does not make every isolate desirable.
Some indigenous yeasts and moulds consume oxygen, moderate surface acidity and contribute aroma or rind character. Their performance depends on species, strain and process conditions.
Unselected communities can include pigment, odour or toxin-producing organisms. White, grey or green appearance is too imprecise to identify the organism or its metabolites.
Salt, pH, water activity, humidity, temperature and casing properties determine which organisms persist. Cleaning, new equipment and seasonal conditions can alter the room ecology.
Document timing, colour, texture, odour, chamber location and recurrence. Microscopy, culture or molecular identification may be required where the growth affects disposition or safety.
Traditional wild-rind practice should be represented accurately in its own context. The Curesmith house method for home fermented sausage remains deliberate inoculation with a suitable commercial culture.
