Yield, Losses and Rework Control

The measurement and control of saleable output, trimming, purge, cooking or drying loss, rejects and permitted rework across a documented meat-production batch.

Yield compares defined input and output states. Green weight, stuffed weight, cooked weight, dried weight and packed saleable weight answer different questions, so the measurement points and denominator must be stated.

Some loss is intrinsic to trimming, cooking, smoking and drying. Abnormal loss can signal poor raw material, overprocessing, leakage, casing failure, evaporation imbalance, scale error, giveaway or unrecorded waste.

Rework is previously processed material intentionally returned to production under a controlled rule. It must remain identified by lot, condition, composition, allergens, process history and permitted destination rather than becoming an anonymous recovery stream.

Rework should enter only compatible products and only at justified amounts. It must not conceal spoilage, foreign material, underprocessing, mislabelling or a failed safety control, and its previous salt, cure, water and ingredient contribution must be included in the new formulation.

Batch records should reconcile issued materials, output, rework, waste and retained samples. Time and temperature exposure, hold status, release authority and carry-over between days or products need explicit controls.

Yield analysis should identify root causes and process opportunities without pressuring staff to hide losses or release unsuitable product. A higher numerical yield is not an improvement when it weakens identity, safety, shelf life or declared composition.
