Ch. 01 The flood

One night took what years had built.

In February 2024 a flood filled the basement. It ruined the equipment and everything that had been maturing in it. Salami, whole muscles, the chamber, the tools. Gone in the silt by morning.

Ch. 02 The decision

So, start again. Properly.

For a while it felt like the end of the road. Then, talking with other curers, one thing kept surfacing: the same beginner mistakes, made again and again, for want of the basics.

That absence brought the purpose back. The decision was simple. Start again, from zero, in the right order, and document every step of it in the open.

From Zero is not about replacing a chamber. It is about rebuilding a curing process from the ground up, in the right order, and sharing that journey with like-minded curesmiths.

    Real projects that need no specialist kit. A fridge, a scale, salt and patience are enough to begin.

    A structured path, in the right order, that does not jump to the hard projects before the basics are sound.

    Honest lessons

    The real mistakes and the fixes, kept in. Nothing is smoothed over for the sake of appearance.
