Airflow and Air Speed
The movement and local velocity of air around curing products, which influence heat transfer, surface evaporation, humidity uniformity and drying gradients.
Air does one job in a drying room: it takes away the humid layer that forms against the surface of every piece. As water evaporates it saturates the film of air touching the meat, and once that film is saturated evaporation stalls, however dry the rest of the room may be. Moving air sweeps the film away and lets drying continue. That is the whole mechanism, and it explains why both too little air and too much are faults.
With no movement, pieces sit in their own humid envelopes. Drying slows or stops, the surface stays damp, and damp surfaces grow wild moulds and slime. The classic sign is a chamber whose meter reads a perfectly good humidity while the products themselves are wet to the touch and going wrong.
With too much, or too directed, the surface loses water faster than the interior can resupply it, and the outcome is case-hardening: a sealed rind over a wet core. The tell is asymmetry. The face into the draught hardens and darkens while the sheltered face stays soft, and a piece that has dried unevenly across its own width has usually been told what to do by a fan.
The working figure is gentle: roughly 0.1 to 0.5 metres per second across the product for dry-curing, which is drift rather than breeze, air you can feel on a wet hand but which would not disturb a hanging thread. Higher speeds belong to the early hours of some processes, where a wet surface is being brought to a pellicle before smoking, and not to the months that follow.
Uniformity matters as much as speed. Air takes the easy route, so a full chamber has fast lanes and dead corners, and pieces in one will be weeks ahead of pieces in the other. Leave space between pieces so each has its own air, keep them from touching, and rotate positions through the hang. If a fan is used, aim it at a wall or use an oscillating one so the room stirs rather than any one piece being blasted.
The simplest diagnostic is the products themselves. Even drying across a batch means the air is right. Consistent differences between the same positions, batch after batch, means the room has a pattern that needs breaking up rather than a humidity problem to chase.
