Humidity Control in Curing Environments
The controlled management of relative humidity and moisture removal so that the product dries steadily without condensation, surface sealing or persistent wetness.
Relative humidity is the throttle on drying, and it works by setting how thirsty the air is. Air at 75 per cent relative humidity is holding three quarters of the water it could hold at that temperature, so it will still take water from a wet surface, but slowly. Air at 50 per cent takes it fast. Air at 90 per cent takes almost nothing. The whole craft is choosing a thirst that matches the rate at which the interior of the product can resupply its own surface.
That is why the working band is roughly 70 to 80 per cent for dry-curing. It is not a tradition; it is the range in which evaporation from the surface runs a little ahead of diffusion from the centre, which is what drying is, without running so far ahead that the surface seals. Below about 65 per cent the surface loses too fast and case-hardens. Above about 85 per cent drying stalls, the surface stays damp, and wild moulds and slime take the opportunity.
Humidity and temperature are not independent, and this catches people out. Relative humidity is relative to temperature, so the same amount of water in the air reads as a higher percentage when the room cools. A chamber that drifts down a few degrees overnight can climb into the nineties without a drop of water being added, and the condensation that follows is the wettest possible surface. This is why steady temperature matters to humidity control, and why a chamber that swings is harder to dry in than a cool one that sits still.
There is a sequence, too. A freshly hung product is wet on the outside and benefits from starting a little higher, around 85 to 90 per cent for the first days, so that its surface does not seal before the salt has finished equalising. The humidity then comes down into the working band for the long dry. Starting dry is the classic beginner's case-hardening.
In practice most home chambers need humidity added rather than removed, which is why the usual kit is a small ultrasonic humidifier on a controller, with a tray of salt-saturated water or a damp cloth as the low-technology version. Removing it is harder and usually means slightly more air exchange. Whichever way, the honest measurement is a calibrated hygrometer at product height rather than the number on the front of an appliance, and the products themselves remain the final check: even, steady weight loss means the setting is right.
