Combination Curing
Combination curing deliberately uses more than one cure-application route, such as injection plus immersion or dry application, with all contributions reconciled on one product-specific calculation and distribution plan.
Why routes are combined. Large or irregular pieces may be injected to shorten the centre path and then immersed or dry-rubbed to treat surfaces and support equalisation. Traditional systems may use arterial pumping with cover brine; industrial systems may combine needle injection, massage and immersion. The route names describe movement, not dose. Combining methods can improve speed and uniformity, but it also creates multiple ingredient contributions and more opportunities for over- or under-cure. Every application step belongs to one controlled formulation.
One mass balance
The calculation records green meat weight, each dry-cure mass, brine composition, target and actual pickup, retained or returned brine as applicable, and contributions from previously cured ingredients. Nitrite and nitrate are calculated separately on the legally required basis. A surface rub is not ignored because most remains outside initially; nor is the full brine tank assumed to enter the meat. Official calculation guidance includes a distinct combination-cure method precisely because adding two independently lawful recipes can exceed the permitted total.
Distribution and equalisation
Needle pattern, arterial access, piece size, surface coverage, massage and equalisation determine local distribution. Injection reduces diffusion distance but can create high-concentration channels; cover brine cannot reliably repair missed muscles. Equalisation reduces gradients under supported time and temperature but is not a universal waiting period. Representative verification considers centre-to-surface and piece-to-piece variation. Batch-average pickup alone does not prove that every location received the intended cure.
Process and hygiene control
Combination systems expose product to injectors, tanks, handling and recirculated liquid, so sanitation and brine management are integral. Product temperature remains within the validated range; brine identity, age and condition are controlled; equipment dead spaces and needle contamination are addressed. The Curesmith 3–7°C curing range remains a house working range, not a replacement for product-specific support or law. Warm acceleration is not accepted simply because multiple application routes are used.
Deviation and disposition
If pickup, cure mass, brine strength, injection coverage or equalisation is outside the approved system, the lot is held and every route is reconstructed. Adding a compensating surface rub after the error may create new hot spots. Extra immersion time cannot prove entry into missed zones. Colour and final salt average cannot clear uncertain nitrite distribution. Rework requires a defined, legally compliant calculation and evidence that the corrective route will reach the affected locations; otherwise the lot is rejected.
Batch segregation
Each combination-cured lot remains segregated until all route records reconcile. Pieces transferred between tanks, trays or massage loads retain identity so pickup and exposure are not averaged across incompatible histories. This traceability is essential when one sub-lot requires hold or rework.
