Combination Curing
A curing system that deliberately combines two or more application routes, such as dry salting, immersion brining, pumping or injection, to achieve a defined distribution and process result.
Combination curing uses more than one application route in a planned sequence. Examples include pumping followed by dry cover salt, or immersion followed by controlled equalisation.
Different routes address geometry, production time, surface treatment and distribution. The method must be designed for the cut rather than assembled from unrelated recipes.
Water, salt, cure and other regulated ingredients from every component belong in one formulation calculation. A premix trade name does not reveal strength without its label specification.
Injection pattern, brine uptake, surface contact, turning and equalisation determine whether deep and surface zones converge. Calendar time alone cannot prove uniformity.
Record green weight, brine composition, injected or absorbed mass, dry addition, losses, temperature and equalisation. Rework or topping-up changes the mass balance and must be controlled.
Use one documented calculation and a product-specific process. Verify representative distribution or endpoint evidence before claiming that combination curing shortened the cure safely.
