Curdling

Also known as broken emulsion, emulsion break

A broken emulsion in a cooked or emulsified product, where fat and water separate out instead of staying bound. The cooked-sausage equivalent of fat separation.

Curdling is the failure of a meat emulsion: in a finely emulsified product such as mortadella, a frankfurter or a smooth pate, the fat, water and protein that should hold together as a stable, smooth paste break apart, and fat and water weep out. It presents as a greasy product with pockets or a rim of rendered fat, a jelly-like layer of released water, a coarse or broken texture instead of a fine springy one, and fat caps under the casing. It is the cooked and emulsified counterpart of fat separation in dried products: the same loss of bind, arrived at through heat and mechanical damage rather than through drying.

The mechanism is the collapse of a protein-stabilised emulsion. A meat emulsion is not a true emulsion in the strict sense, but it behaves like one: salt-solubilised myofibrillar proteins, chiefly myosin, coat the fat particles and, on gentle heating, set into a gel that traps the fat and water in a stable matrix. That structure depends on keeping the proteins intact and the fat finely and evenly dispersed until the gel sets. Two things break it. Overheating during chopping, if the batter warms too much as the blades work, partially melts the fat and denatures the proteins before they can form their coating, so the fat coalesces instead of staying dispersed. Overheating during cooking, taking the product too hot or too fast, ruptures the set gel and drives the fat and water out of it. In both cases the emulsion breaks and the phases separate.

The usual causes are a batter allowed to warm during emulsifying, over-chopping that both heats the mix and damages the proteins, too little salt-solubilised protein to coat the fat in the first place, poor-quality or too-soft fat that melts readily, and cooking that is too hot or too rapid. Temperature control through chopping is the single biggest factor, which is why fine emulsions are made cold, often with added ice.

**How to avoid it.** Keep the mixture cold throughout emulsifying, not to overwork or overheat the batter, to ensure enough salt-solubilised protein and sound firm fat to build a stable emulsion, and to cook gently to the target internal temperature rather than fast and hot. Keeping the batter below the temperature at which the fat softens, commonly by working with well-chilled meat and fat and adding ice, holds the emulsion together until the gentle cook sets it for good.

**How to fix it.** For a broken emulsion there is essentially no remedy once it has separated, since the structure cannot be reassembled after the fact. A curdled batch is a lesson in temperature and chopping discipline. It is usually a quality fault rather than a safety one, though a product that has wept badly and been handled warm should be judged on its overall condition.
