Freezing of Meat Products
Freezing converts part of the meat’s water into ice and greatly slows microbial activity. It preserves rather than sterilises, so organisms present before freezing may become active again after thawing.
The rate of heat removal affects ice-crystal formation and tissue damage. Product size, composition, packaging, airflow and equipment determine whether the centre freezes promptly.
Freezer packaging limits moisture loss, oxygen exposure, odour transfer and physical damage. Poor barriers or damaged seals encourage freezer burn, oxidation and surface dehydration.
Freeze-thaw quality effects include purge, softer texture, protein damage and colour change. The severity depends on the product, freezing rate, storage stability and number of cycles.
Thawing of meat products must keep the surface controlled while the centre softens. Refrigerated thawing, another approved cold method or cooking from frozen is safer than leaving meat at room temperature.
Frozen storage extends usable life but does not make quality permanent. Date control, packaging condition and temperature history should determine use, while ready-to-eat status still depends on the product’s process.
