Matanza

Also known as la matanza, matança (Catalan), pig harvest

The traditional Spanish pig harvest, the winter ritual of slaughtering a pig and turning every part of it into cured meat.

The matanza is the day the pig becomes the larder. Held in the cold months, it draws family and neighbours together to slaughter, butcher and preserve a whole animal across a few intense days. Blood becomes morcilla, lean and fat become chorizo and salchichón, the hams and loins go to salt, and the offal becomes spreads such as cachuela.

The timing is craft, not sentiment. Winter's cool, steady air was the safe microclimate for the first days of curing, in the centuries before refrigeration. The matanza is where Spain's charcuterie tradition lives, the human rhythm behind the science of salt, meat and time.
