Packaging
The selection and control of materials, atmosphere, seals and package format used to protect cured meat, manage oxygen and moisture, and support its intended shelf life.
Packaging manages three things: oxygen, moisture and contamination after the process is over. It is worth being clear at the outset that it does not make anything safe. A package preserves the state a product was already in, and a badly made product in a good package is a badly made product with a longer opportunity.
Oxygen is the main enemy of cured meat once it is finished. It turns fat rancid, and it fades the cured pink to grey and then brown, which is why sliced cured meat browns at the cut face within hours in air. Vacuum packing removes it, which is why a vacuum-packed salame keeps its colour and its fat for months longer than the same product in a paper wrapper. Modified atmosphere does the same job differently, replacing the air with carbon dioxide and nitrogen, and the carbon dioxide is mildly inhibitory in its own right.
Moisture is the second axis and the one that catches people. A vacuum bag stops a product drying, which is exactly right for a finished salame and exactly wrong for one still hanging. It also traps whatever moisture is present and redistributes it, which is genuinely useful: a slightly case-hardened piece vacuum-packed and refrigerated for a fortnight will even out, the rind softening as the interior gives up its water. That is a real technique rather than a workaround.
The important caution is anaerobic. Removing oxygen suppresses the moulds and aerobic spoilage bacteria that would otherwise be the first to spoil a product, and those organisms are also the visible warning that something is wrong. What it does not suppress is Clostridium botulinum, which prefers exactly those conditions. For a properly cured, nitrited, dried product this is fine, because the salt, nitrite and low water activity are what control it. For an under-cured or high-moisture product a vacuum bag removes the warning signs while favouring the one organism you least want, and that is a genuinely worse position than leaving it in air.
Listeria monocytogenes is the other name to know here, because it grows at refrigeration temperature and its usual route is contamination after processing, during slicing and packing rather than during the cure. Clean hands, clean blades and clean surfaces at the packing step are doing real work.
Practically: finish the product first, cool it fully before sealing so no condensation is trapped, vacuum for storage and for evening out, and refrigerate or freeze unless the product is genuinely shelf-stable. Date the package. A package hides age well.
