PFN Meat
Also known as Pale Firm Non-exudative meat, PFN
Pale but firm, water-holding meat, a mild colour deviation short of PSE.
PFN meat is paler than ideal but stays firm and non-exudative, holding its water. It is a milder deviation than PSE, the right water behaviour but an off appearance, and usually usable, if not the first choice where colour matters.
