PSE Meat

Also known as Pale Soft Exudative meat, PSE

Pale, soft and exudative postmortem meat in which rapid early acidification while muscle remains warm impairs protein function, water holding and processing performance.

Define the postmortem condition PSE means pale, soft and exudative. It develops when postmortem pH falls unusually quickly while muscle temperature is still high, impairing protein structure and the ability to retain water. The words describe a linked pattern, not three independent acceptance tests. Record species, muscle, time after slaughter, temperature, pH measurement time, colour, texture and purge. A pale muscle that remains firm and non-exudative is not automatically PSE, and exudate can have other causes.

Measure pH and appearance in context Early pH, ultimate pH, temperature and colour answer different questions. A late pH value can miss the speed of the earlier decline, while colour varies with species, muscle, oxygen exposure and instrument conditions. Use calibrated measurements at defined locations and times and compare them with a supported supplier or product classification. Primary PSE pork research links lower pH and postmortem protein changes with reduced water holding, but its analytical findings are not a universal intake threshold.

Trace the processing consequence Reduced water holding and protein function can increase purge, lower yield, weaken bind, produce uneven curing uptake or create a pale finished colour. Compare the affected raw lot through mixing, stuffing, cooking or drying with normal material under the same process. Excess added water, weak extraction, freeze-thaw damage and overprocessing can resemble the outcome. The diagnosis should explain both the raw measurements and the finished distribution rather than attaching PSE to any dry or crumbly product.

Separate safety from functionality PSE does not itself identify contamination or make a product unsafe, but neither does it prove safety. Review inspection status, freshness, time-temperature history and the validated product process independently. A wholesome lot can be technologically unsuitable for a whole-muscle cure yet usable in a controlled alternative product. Conversely, adding phosphate, binder or water where permitted can change function but cannot legitimise spoiled, contaminated or temperature-abused meat or bypass identity rules.

Contain and decide disposition Segregate the incoming lot and batches that received it while pH, purge, formulation, process response and legal identity are assessed. Product disposition should state whether the issue is safety, suitability, yield, colour, texture or process support. Blending may reduce an average defect while leaving uneven functionality and traceability unresolved. A successful sample cook does not automatically clear a dry-cured product, and a poor sensory result does not define the microbial status.

Correct and verify the material route Correct animal-handling or supplier controls where available, receiving classification, measurement timing, segregation and approved end use. Verify future lots across normal supplier, season and muscle variation and follow them into finished yield, purge, bind, colour and drying. Do not close the event after one acceptable pH average. Closure requires reconciled material and product disposition plus repeated evidence that the classification and routing prevent the former finished-product consequence.
