DFD Meat
Also known as Dark Firm Dry meat, DFD, Dark cutting beef, Dark cutting
Dark, firm and dry-surfaced postmortem meat with an unusually high ultimate pH, strong water holding and altered colour, processing and shelf-life behaviour.
Define the postmortem condition DFD means dark, firm and dry-surfaced. It is associated with inadequate postmortem acidification, commonly after muscle glycogen was depleted before slaughter, leaving an unusually high ultimate pH. Strong water holding makes the cut surface appear dry even though the muscle retains water. Record species, muscle, time after slaughter, temperature, ultimate pH, colour, texture and storage history. Darkness alone can also reflect vacuum packaging, muscle type, age or oxygen state.
Confirm pH and colour under defined conditions Measure ultimate pH with a calibrated instrument at a defined anatomical site and time, and record colour after a controlled exposure condition appropriate to the material. A surface that blooms from purple to red is not evidence of DFD, and one dark patch may not represent the lot. Compare containers, muscles and carcasses rather than relying on an average. Use the applicable supplier specification or classification; do not import a universal numerical threshold without product support.
Evaluate freshness and shelf-life consequences Higher-pH meat creates a different microbial and sensory environment from normally acidified muscle. Primary pork research found shelf-life differences among quality classes and higher microbial counts in DFD pork later in storage. That evidence supports closer control, not an automatic universal discard rule. Review age, packaging, cold chain, initial microbiology where relevant and intended time before curing. Normal odour at receipt does not guarantee that the planned raw-material or product shelf life remains supported.
Trace the technological effect High water holding can change salt movement, bind, yield, colour formation and drying time. Compare DFD material with normal material through the actual cure rather than assuming the same consequence in every product. A high-pH whole muscle may retain water and dry slowly; in a comminuted product it may alter extraction and finished colour. Formulation, diameter, culture performance and drying still matter, so the raw-material diagnosis must explain the observed product pattern.
Contain and determine disposition Segregate the incoming lot and linked production while ultimate pH, freshness, cold-chain history, process response and intended shelf life are assessed. Product disposition must separate wholesomeness, technological suitability and process support. Blending can conceal a high-pH tail and complicate traceability. Later acidification or drying may form part of a supported process, but it does not rewrite unsupported raw storage or prove that every piece followed the required path.
Correct and verify the control Correct supplier animal-handling controls where available, receiving pH measurement, lot segregation, storage time, approved end use and process monitoring. Verify across later deliveries and seasonal variation, including the least favourable pH and largest or slowest-drying units. Trend raw pH, purge, storage age, fermentation and drying performance and spoilage complaints by supplier. Close only when quantities and disposition reconcile and repeated evidence supports the chosen material route and finished shelf life.
