Raw-Material Freshness and Quality

The intake and pre-processing condition of meat, fat, organs and other raw materials, assessed through identity, inspection, time-temperature history, sensory evidence and technological function.

Define freshness as a history Freshness is not simply how meat smells at the dock. Establish slaughter or production date where available, supplier, inspection status, transport, packaging, storage, freezing and thawing, receipt time and intended processing time. A single surface temperature describes one moment and one location. Compare it with logger data, product-core evidence, carton position and the credible earlier history. Missing history remains uncertainty; a cold reading after rechilling does not prove continuous control.

Use sensory examination as screening Inspect packaging integrity, purge, surface moisture, slime, tack, colour, odour, texture, fat condition and visible contamination under consistent conditions. These observations can reveal deterioration or damage and define where to sample, but they do not prove pathogen absence or identify a microbial species. Vacuum-packed meat can appear dark before oxygen exposure, and frozen-thawed meat can release purge without being spoiled. Record the exact observation rather than converting every departure into the word stale.

Separate fitness from process suitability Material must be safe and suitable for human consumption and also fit the intended cured product. Wholesome meat can have PSE or DFD characteristics, weak protein function, unsuitable fat, excessive connective tissue or freeze-thaw damage. Those conditions may change bind, colour, yield or drying without proving decomposition. Conversely, technological adjustment cannot legitimise contamination or spoilage. Keep the safety, legal identity, technological and commercial acceptance decisions visible and assign a competent authority for each.

Sample the heterogeneous lot Inspect across pallets, cartons, top and centre positions, first and last receipts, different muscles, fat and organs rather than selecting the easiest surface. Link each result to its exact lot and location. Composite sampling can estimate an average while hiding a warm, damaged or high-pH tail. Preserve unopened units and affected and acceptable comparisons before grinding or mixing destroys spatial evidence. Laboratory results answer only the method, sample and decision rule actually used.

Contain and decide disposition before processing Segregate suspect material, associated trim and any batches already receiving it. Product disposition may be acceptance, conditional alternative use, return, controlled rework, condemnation or another lawful route according to the actual finding. Planned cooking, curing, freezing or smoking is not a universal recovery for unfit raw material. A supplier credit does not decide finished product already made, and blending does not remove uncertain identity, storage history or contamination.

Correct and verify supplier and storage controls Correct approved-source requirements, material specifications, transport, receiving limits, stock rotation, thawing, segregation and escalation rules as the evidence requires. Verify future lots over enough time to capture supplier, seasonal and transport variation and follow material into finished performance and shelf life. Trend temperature history, age, purge, pH, rejected tissue, fat quality and complaints by source. Close the event only after all quantities and disposition reconcile and sustained evidence supports the revised intake control.
