RSE Meat
Also known as Reddish-pink Soft Exudative meat, RSE
Meat of normal colour but soft and weepy, an intermediate defect between sound meat and PSE.
RSE meat looks right, a normal reddish-pink, but behaves like PSE in the way that matters for curing: it is soft and exudative, losing its grip on water. It sits between sound RFN meat and full PSE, and because the colour looks fine it can slip past a visual check while still binding poorly and dripping in the bag.
