Salt Types and Selection
Salt types and selection is the choice of food-grade sodium chloride by purity, crystal size, additives, dissolution behaviour and application method rather than by culinary name or visual appearance.
Salt is specified, not romanticised. Sea salt, rock salt, vacuum salt, kosher-style salt, flake salt and table salt describe origin, manufacture or crystal form, not one dependable density or purity. For curing, the controlling facts are food-grade status, sodium-chloride content, crystal size distribution, moisture, insoluble matter and declared additives. Trace minerals may alter flavour or colour but do not create a safer or more authentic cure by themselves. A brand or origin claim cannot replace a supplier specification. Salt is weighed in grams, so bulk-density differences that make spoon measures unreliable are removed from the formula.
Crystal size and application
Fine crystals dissolve rapidly and can distribute well in comminuted meat or brine. Coarser crystals may be easier to spread on a whole muscle but create more local concentration before dissolution. Surface area, moisture and rubbing method affect adhesion. A change of grind can therefore change application uniformity even when total mass is constant. The cure record names the grade and method. Traditional salt-box methods that use excess salt and time control are not converted into equilibrium curing merely by changing crystal size.
Additives and interactions
Iodide or iodate, anti-caking agents and other permitted additives differ by product and country. Many are compatible with ordinary curing at authorised levels, but a protected specification or sensory objective may require a particular salt. Anti-caking systems can affect clarity or sediment in concentrated brines, while contaminated or non-food salt can introduce physical or chemical hazards. Claims that iodised salt universally ruins cured meat are too broad; the actual additive, level and product evidence matter. Conversely, decorative or bath salt is never accepted without food-grade identity.
Selection by process
Dry curing prioritises even surface application and predictable dissolution; injection brine prioritises complete solubility and low insoluble matter; comminuted sausage prioritises rapid uniform dispersion. The salt also interacts with protein extraction, water binding, flavour, starter performance and water activity. Sodium-reduction salts containing potassium chloride are separate formulations, not ordinary salt, and can change taste and microbial performance. Their use needs legal, sensory and safety review for the actual product.
Receiving and substitution
Receiving checks label, grade, lot, damage and storage dryness. A new supplier or crystal grade is evaluated for dissolution, spreading and sensory effect before routine use. The formula remains mass-based and accounts for salt already present in curing premixes and ingredients. If the wrong salt or an unidentified material was used, product is held while composition and process impact are assessed. More drying cannot automatically correct an under-salted formulation, and washing cannot guarantee removal of a concentrated surface zone.
