Uneven Salting
Salt distributed unevenly through a product, leaving some areas over-salted and others under-salted. It undermines both flavour and the even protection salt is meant to give.
Uneven salting means the salt has not distributed the same way through every part of the same piece, so a single piece of meat can show both faults at once. Cut into it and the picture can vary place to place: parts taste flat and under-seasoned, others sharply salty, sometimes within the same slice. A whole muscle salted unevenly often dries unevenly too, since salt uptake and moisture loss are linked, leaving a patchwork of firmer, more advanced areas next to softer, less-cured ones. In a sausage, poor mixing can leave visible streaks or pockets where the salt and cure never properly reached, distinct from the surrounding mix in both colour and firmness once matured.
The cause is physical rather than chemical. Salt applied to the outside of a whole muscle has to migrate inward by diffusion, and if it is not given long enough, or is not applied uniformly to begin with, thinner or more exposed parts of the piece take up proportionally more salt while thicker or more sheltered parts take up less. In a sausage or other comminuted product, the same unevenness comes from incomplete mixing, so some of the meat never meets the salt and cure at the concentration the recipe intended, while the rest may run slightly high.
An irregularly shaped joint, salt rubbed on more heavily in some places than others, too short a resting time for the salt to equalise before the next step, or a sausage mix stopped before it has turned properly tacky, are the usual causes. Awkward shapes, a thick end next to a thin one, a joint with an exposed bone or seam, are naturally harder to salt evenly than a uniform cut.
How to avoid it
For whole muscle, the EQ method solves most of this by design. The total salt is a known quantity applied to the whole surface, and time under refrigeration lets it equalise through the piece rather than relying on a perfectly even application by hand. For sausage, thorough mixing until the mix is uniformly tacky, not just until the salt looks stirred in, is what confirms an even distribution.
How to fix it
If uneven salting is caught early, while a whole muscle is still in its resting or equalising stage, more time, or repositioning the piece so it drains and rests differently, can help the salt even out. Once a piece is well into drying, the underlying unevenness usually cannot be fixed, and the safe approach is to treat the least-salted, least-dry patch of the piece as the one that determines whether the whole piece is safe, not the average. For a sausage, uneven mixing cannot be corrected after stuffing, so prevention at the mixing stage is the only real control.
