Over-Salting

Too much salt, giving a harsh, unpalatable result and a surface that can dry too hard. Safe but often inedible, and largely avoidable with weighed ratios.

Over-salting means the cure has taken up more salt than the target range, and it shows first on the palate. The product tastes sharply, unpleasantly salty rather than well seasoned, sometimes to the point of being difficult to eat. Texturally, a whole muscle can feel firmer and drier at the surface than expected for its stage of drying, occasionally with a slightly gritty or crusted rind where the excess was severe. In a sausage, salt beyond the amount needed to fully solubilise the binding proteins mostly adds saltiness rather than further bind, and can leave the mix drier rather than juicier.

The same osmotic mechanism that makes salt useful is what makes over-salting a problem. Salt draws water out of the meat, and a higher concentration draws harder and for longer. In a whole muscle this can pull moisture from the surface faster than it can migrate out from the centre, firming and drying the outer layer ahead of schedule. That is not the same fault as case-hardening, which is driven by the surrounding air rather than the salt level, but the two can compound each other, since a heavily salted piece in a dry, fast-moving microclimate carries a higher risk of a hardened rind sealing in a centre that has not caught up. In comminuted products, salt beyond roughly 2 to 3 per cent has already done its job of solubilising the myofibrillar proteins, so anything past that point changes the eating quality rather than the structure.

It is usually the mirror image of under-salting's cause: a salt box left on far longer than the piece needed, a heavy hand with a dry rub, or a recipe scaled up in weight without scaling down the salting time. Because traditional salt-box curing relies on the curesmith's judgement of when to stop, it is easy to leave a smaller or leaner piece in past the point it needed.

**How to avoid it.** The EQ method removes the risk directly. Because the exact weighed amount is all the salt there is, the meat cannot take up more than was added, however long it is left. For traditional salt-box curing, timing to the piece's weight rather than to a fixed number of days, and checking smaller or leaner pieces earlier, avoids the same mistake.

**How to fix it.** Over-salting is rarely a safety problem, since more salt drives water activity down further rather than up, strengthening preservation rather than weakening it. It is usually a texture and palatability problem, and the common remedy is to soak or rinse the finished product in fresh water before cooking or eating, drawing some of the excess salt back out, a practice long used on heavily salted hams and fish. The one safety caveat is where a heavily salted surface has hardened and sealed before the centre finished drying. Judge that case by even weight loss and the texture of the centre once cut, not by how dry and firm the surface feels, since a hard rind can still be hiding an unsafe core.
